Banksii Vermouth Bar & Bistro offers a contemporary Mediterranean-style menu with a strong focus on Australian botanicals.

Named after Sir Joseph Banks, the first botanist to come to Australia, Banksii is the brainchild of Head Chef Hamish Ingham and sommelier Rebecca Lines, of Bar H Dining in Surry Hills.

Ingham has created a fresh and light, Mediterranean-style menu with a strong botanical focus, with Lines in charge of the drinks list that features an impressive collection of over 40 vermouth-based drinks, as well as a strong selection of Australian and Mediterranean wines.

Banksii is located on the waterfront at Barangaroo with both indoor and outdoor drinking and dining options.
